93 Points: Halliday Wine Companion - 7% merlot; open-fermented with 25 days on skins; 12 months' maturation in barriques, 30% new French. Cedary and leafy on the bouquet initially, some redcurrant and black fruit appearing as the wine opens up. Still something of a baby, but shows quite classical Yarra cabernet structure and style. Will undoubtedly benefit from a decent spell in the cellar.
92 Points: Jeremy Oliver - Underpinned by fresh chocolate/cedar oak and minty suggestions of dried herbs, its bright aromas of violets and cassis, plums and mulberries precede a gentle, medium-bodied palate. It’s stylish and very polished, with vibrant dark fruit and assertive creamy vanilla oak underpinned by faintly drying tannins and wrapped in acids that veer very slightly towards the green-edged. Time should see this elegant wine develop in cedary and cigarboxy fashion.
92 Points: JamesSuckling.com - Nicely spicy with red ripe currant, hints of pepper and a touch of charcoal. Very refined. Medium body with juicy fruit. Extremely polished, satin-like tannin that dials in the fruit. A baby now, but already elegant, agile and fine. Try this in 2022.
Tasting Notes:
This is a very stylish and classic expression of Yarra Valley Cabernet Sauvignon. Quite tightly wound when young, the wine will benefit tremendously from decanting prior to serving, but more significantly, from a minimum of five years of bottle age. Red berries, cassis, subtle leafy and cedar hints, a complex yet well- balanced and elegant palate, a fine structural tannin backbone, with lingering acidity and flavour.
Winemaking:
The fruit was hand-picked, then meticulously sorted to select only the best berries for fermentation in three, small, open fermenters. The fermenters were gently plunged twice daily during fermentation, and left ‘on skins’ for a total of 25 days during maceration. The wine was matured in premium oak barriques, for 12 months, before bottling in June 2020.
